Vegan Chopped Cheese Sandwich -Buffalo Style

This vegan chopped cheese sandwich is my take on the classic New York City favorite, with a spicy Buffalo twist! Made with Impossible meat, melted vegan cheese, and my homemade Buffalo sauce, it's rich, cheesy, a little messy, and absolutely delicious.

Many of the recipes I share here focus on healthy, nutritious plant-based meals, but sometimes you just want something a little indulgent. And that's one of the things I love about vegan cooking—it doesn't always have to be about eating healthier. Sometimes it's simply about enjoying incredible food without using animal products.

This vegan chopped cheese recipe is perfect for game day, a casual party, or a fun Friday-night dinner. It's also one of my husband's favorite sandwiches, and I think you'll understand why after the first bite!

Why Buffalo sauce? Well, I'm originally from Buffalo, New York, and we like things spicy! My homemade Buffalo wing sauce gives this sandwich a satisfying as the original.delicious kick, but it's also wonderful on vegan chicken wings or drizzled over tater tots with homemade ranch dressing. You can find my Buffalo style tater tots recipe here

So grab a few napkins, invite some friends, and enjoy a sandwich that proves vegan comfort food can be every bit as indulgent and and satisfying as the original.

Why You’ll Love This Recipe

  • All the indulgence, none of the animal products. This is proof that vegan comfort food can be just as rich, cheesy, and satisfying as its traditional counterpart. The combination of savory Impossible meat, melted vegan cheese, and homemade Buffalo sauce makes this sandwich a real treat for omnivores and vegans alike.

  • A fun twist on a New York classic. This vegan chopped cheese sandwich has all the hearty comfort of the original, with a little Buffalo heat, sauteed peppers and onions, and some decadent vegan blue cheese.

  • Perfect for game day or casual entertaining. Serve these sandwiches at your next football party, or make them for a fun Friday-night dinner.

  • Easy to make at home and more economical than ordering out. You don't need any special equipment or complicated techniques to make this satisfying sandwich and it is every bit as good as what you could buy at the local sandwich shop!

Cat’s Tips

  • Make your own Buffalo sauce. Trust me, homemade Buffalo sauce is so much better than store-bought! It's easy to make, and the fresh, tangy, spicy flavor really makes this sandwich special. Plus, you can use the leftovers on vegan wings, tater tots, or just about anything that needs a little kick.

  • Use vegan blue cheese dressing. Buffalo sauce and blue cheese are a classic combination for a reason! The cool, creamy dressing balances the heat of the Buffalo sauce and adds another layer of flavor. Just be sure to choose a vegan version to keep the sandwich completely plant-based.

  • Choose sliced vegan cheese for the best melt. I've found that shredded vegan cheese melts more evenly than sliced cheese in this recipe. Sprinkle the shreds over the hot chopped Impossible meat and toss to combine and melt before piling everything onto your roll. You'll get that delicious, gooey, cheesy filling that makes a chopped cheese sandwich so good.

Serving Suggestions

  • Keep it classic. Serve your vegan chopped cheese sandwich with a side of crispy French fries, potato chips, or sweet potato fries. It's comfort food, so why not go all out?

  • Make it party-friendly. Prepare one large sub sandwich and cut it into smaller portions for a party or game-day gathering. Arrange the pieces on a platter and let everyone help themselves. Keep a few extra napkins handy!

  • Add something fresh. This is a rich, hearty sandwich, so a simple green salad or a side of crunchy coleslaw makes a nice contrast.

  • Bring on the Buffalo sauce! Serve a little extra homemade Buffalo sauce on the side for anyone who likes things extra spicy.

Yield: 4

Ingredients

For the Homemade Buffalo Wing Sauce
  • 6 tablespoons Frank's Red Hot Sauce (be sure to use Franks)
  • 1/4 cup plant based margarine (melted)
  • 1 tablespoon white vinegar
  • 1/8 teaspoon celery seed
  • 1/8 teaspoon cayenne pepper (you can add more if you want more heat)
  • 1/8 teaspoon garlic powder (ok to sub garlic salt)
  • 1/4 teaspoon worcestershire sauce
For the Sandwich Filling
  • 1 whole bell pepper diced (I use 1/2 green and 1/2 red)
  • 1/2 yellow onion diced
  • I 12 ounce block of Impossible beef (see notes for options and storage)
  • 1 7 ounce bag of vegan shredded cheddar or mozzarella
  • Vegan blue cheese dressing (I like treeline chunks and Follow Your Heart Liquid)
  • Pickled banana peppers for topping
  • Shredded lettuce (for topping)
  • Diced tomatoes (for topping)
  • 4 sub rolls

Instructions

  1. To mix up the Buffalo wing sauce put all of the sauce ingredients into a bowl and stir well to combine. Set aside while you make the sandwich filling
  2. Dice the peppers and onion into small quarter inch pieces and grill on a cast iron skillet that has been sprayed with cooking oil (I use avocado oil because it doesn't burn). If you don't have a skillet a saute pan works just as well.
  3. When the peppers are bright in color and the onions are translucent move them to one side of the griddle or remove entirely.
  4. Add the package of Impossible meat to the griddle.
  5. Chop the Impossible meat into small chucks and toss continually so it doesn't stick. Once it is brown and no longer pink mix the Buffalo wing sauce in with the meat until it is well coated.
  6. Once the meat is covered with Buffalo Sauce mix in the sauteed peppers and onions and toss it until it is well combined- I do this on the griddle.
  7. Sprinkle a package of vegan cheese over the top and either mix it in or let it melt on top. Letting it form a layer on top is more traditional, but mixing it in will help it melt. You can also use slices, but the shreds melt better.
  8. Toast the sub rolls and spread a layer of vegan blue cheese on both sides of the toasted sub rolls. (NOTE- if you are using vegan blue cheese chunks sprinkle them on top at the end)
  9. Add the sandwich filling (grilled meat/peppers/onions/cheese) to the sub roll.
  10. Top with banana peppers, shredded lettuce, and diced tomatoes
  11. Enjoy!!
