Ingredients

  • 1 can of great northern beans
  • 1/2 teaspoon smoked paprika
  • 1/2 tablespoon olive oil
  • 1 teaspoon maple syrup
  • 1/2 teaspoon salt
  • Bread–I use sourdough or ciabatta bread
  • 1 ripe medium sized avocado sliced into thin slices
  • 2 large leaves of romaine lettuce (you can also use spinach or arugula) chopped into strips
  • 1 medium sized tomato sliced into thin slices
  • 1 radish sliced into thin disks
  • Everything but the bagel seasoning
  • Salt and pepper

Instructions

To Make the Smokey White Bean Spread
  1. Rinse one can of great northern beans–I rinse mine until there are no more bubbles.
  2. Put the great northern beans into the food processor with the smoky paprika, the maple syrup, the olive oil, and the salt. If you eat an oil free diet you can reserve some bean juice and use that instead.
  3. Pulse until everything is well mixed, then turn the food processor on occasionally scraping down the sides until you have a smooth hummus like spread.
Put it all Together
  1. Spread two pieces of bread with a generous helping of the smoky white bean spread
  2. To the bottom piece of bread add a layer of chopped lettuce
  3. Add a layer of thinly sliced tomato (I generally add about two slices)
  4. Salt and pepper the tomato
  5. Add a thin layer of radish disks
  6. Add a layer of sliced avocado
  7. Sprinkle the avocado with "Everything but the Bagel" seasoning generously
  8. Put the top layer of bread on
  9. Enjoy!!

Notes

Remember, the better your ingredients, the better your food/recipes. This recipe is especially delicious in the summer and fall when you can get local farm fresh produce. I always try to get my produce at my local farmer's market. This supports small businesses and the produce tastes better.
