Lebanese Green Bean Stew (Loubia) with Plant-Based Lamb!

This green bean stew (Loubia) is one of my favorite Lebanese Recipes. It’s a classic comfort food that’s as nourishing as it is flavorful. Traditionally served over rice, my grandmother would often make Loubia as a simple, satisfying, and naturally plant-based dinner. However, sometimes she would also make it with lamb meat.

For this version, I gave the recipe a modern twist by adding Juicy Marbles vegan lamb, which adds heartiness and protein while keeping the dish 100% vegan.

Ingredients

  • 1 pound chopped green beans- use the flat Italian green beans if you can find them!

  • 1 medium size onion

  • 3-4 tablespoons tomato paste

  • 1-2 tablespoons oil - I use Avocado- but grandma used Olive Oil

  • 1-2 tablespoons plant based butter- I like Earth Balance or Miyoko’s

  • 4-5 cups of water

  • 1 teaspoons allspice

  • salt to taste

  • Plant based lamb or beef- for this recipe I used Juicy Marbles brand but I have also used Gardein Beefless Chunks or seitan. The Juicy Marbles lamb does not taste like lamb but it gives it a great texture, flavor and heartiness.

  • Serve over rice- Grandma says use Ben’s white rice

Instructions

  1. Put the green beans in a soup pot or dutch oven, cover them with water and bring to a simmer.

  2. Once the beans are simmering, add in 2 tablespoons of tomato paste and 1/2 teaspoon of allspice and let the beans simmer covered for about 20 minutes.

  3. While the beans are simmering, heat the oil in a saute pan over medium low heat for about a minute.

  4. Add in your chopped onion and saute until golden brown and translucent about 10 minutes- or until see through and golden brown

  5. Add about 1 tablespoon of plant based butter

  6. Add in 1-2 packages of Juicy Marbles plant-based lamb (or other suggestions given above)

  7. Let the plant-based meat just brown slightly, cook it with the onion for about 2-5 minutes.

  8. Add the onion and plant-based meat to the green beans and return to a simmer. (to make this a one pot meal see notes and adjustments below)

  9. Simmer for about 25 more minutes until the beans are very very tender.

  10. Add salt to taste- you may also want to add in another 1/2 teaspoon of allspice and another tablespoon of tomato paste. For this recipe I look for the color to be bright red, the allspice should be present but not overpowering.

  11. Serve over rice with pita bread if you want to eat it Lebanese style

Notes and Adjustments!

If you want to make this a one pot meal just cook it all in the dutch oven or soup pot. Start with the onion and once it is browned you can add in the green beans. I make it this way often and it turns out great- Enjoy!
