Vegan Blueberry Pancakes Perfect Every Time

These vegan blueberry lemon pancakes made with sourdough discard are perfect for your next vegan brunch. Too often vegan pancakes turn out dense and gooey, but not this recipe! The sourdough discard makes them fluffy, light and delicous every time. No discard? No worries, check out the notes and adjustments below. These egg and dairy free pancakes combine the natural sweetness of ripe blueberries with the zesty brightness of fresh lemon, resulting in a melt in your mouth pancake that anyone will enjoy.

Utilizing sourdough discard not only reduces food waste but also adds a delightful depth and tang to the batter, creating a uniquely satisfying texture. Ingredients  

  • 1 & ½ cup soy milk plus 1 teaspoon of lemon juice added to the milk to curdle it

  • Replacement for 1 egg I use Bob’s Red Mill– but I will link other egg replacers you can use in “notes and adjustments” section below

  • 2 cups all purpose flour

  • 1 teaspoons baking powder

  • 1 teaspoon baking soda 

  • 2 tablespoons white sugar

  • 1 teaspoon salt 

  • 1 cup sourdough discard at room temperature 

  • 2 Tablespoons vegetable oil 

  • 1 tablespoon of melted plant based butter

  • 1 tablespoon of maple syrup–use real maple syrup if you can

  • 1 teaspoon vanilla

  • 1 teaspoon lemon extract (optional)

  • 1 cup of fresh blueberries

Instructions

  • Mix up your egg replacer and set it off to the side

  • Mix 1 teaspoon of lemon juice with 1 & 1/2 cups of soy milk and set off to the side–the milk will slightly curdle. You can use other plant based milk just be sure it is unsweetened and unflavored and it should have some fat in it.

  • Mix all your dry ingredients together in a bowl:

    • 2 cups all purpose flour

    • 1 teaspoons baking powder

    • 1 teaspoon baking soda 

    • 2 tablespoons white sugar

    • 1 teaspoon salt 

  • Add the wet ingredients to the dry ingredients in this order:

    • The soymilk/lemon juice mixture

    • The egg replacer

    • 1 cup sourdough discard at room temperature 

    • 2 Tablespoons vegetable oil 

    • 1 tablespoon of melted plant based butter

    • 1 tablespoon of maple syrup–use real maple syrup if you can

    • 1 teaspoon vanilla

    • 1 teaspoon lemon extract (optional)

  • Wisk the wet and dry ingredients until they are well mixed and there are no lumps

  • Add in about 1/2 cup to 1 cup of blueberries. You will have to adjust as you go, you don’t want too many or too few!

  • Heat a pancake griddle over medium heat until water splashed on it sizzles. Alternatively you can use any saute pan. Be sure to melt plant based butter on your griddle or in your pan, make sure it is not so hot that the butter and pancakes will burn.

  • Pour pancake batter onto your griddle or pan and cook on one side until you don’t see any more bubbles forming in the pancakes, they you know it is time to flip them. You will cook for about 2 minutes each side depending one the griddle you are using. Watch my YouTube tutorial for more information on how to tell when they are ready to flip.

  • To serve, top with plant based butter and maple syrup.

  • Enjoy!!

Notes and Adjustments

I personally love chocolate chips pancakes and for those I would skip the lemon extract and add a bit more vanilla extract, replace the blueberries with chocolate chips, and maybe add a dash of cinnamon.
