Easy Homemade Pistachio Butter

Perfect for a Healthy Plant-Based Snack or Appetizer

Homemade pistachio butter is my new favorite snack and it is incredibly easy to make at home. I love to serve this as an appetizer at parties or gatherings. This creamy, nutty spread pairs beautifully with fresh fruits like apple slices or pear wedges and I love to dip crackers or pretzels in it too. It’s a versatile option that can be slathered on toast or drizzled over oatmeal for a quick, healthy lunch or snack. Packed with protein, magnesium, and potassium it provides a satisfying pre or post workout energy boost. Finally, what I love most about this recipe is it saves money and eliminates single use plastic! So, skip the store-bought stuff and whip up a batch at home—your taste buds (and maybe even your friends) will thank you!

Ingredients

  • 3 cups of raw unsalted pistachio nuts

  • 1/2 teaspoon of salt or salt to taste

  • 1-2 tablespoons of a neutral oil (sunflower, grapeseed, or canola)

  • Agave/maple syrup to taste (optional)

Instructions

  1. Preheat the oven to 350 degrees.

  2. Spread the pistachios out on a baking sheet.

  3. Roast the pistachios in the oven until you can smell the pistachio flavor- about 7-9 minutes.

  4. Let the pistachios cool until they are just warm to the touch.

  5. Put the pistachios in your food processor and pulse them until they look like fine pistachio crumbs

  6. Once the crumbs have formed you can add in about 1/2 a teaspoon of salt, you can add more later if it is not salty enough for you.

  7. Turn the food processor on and process for about 5-9 minutes until the paste begins to turn into a nut butter- you may think this will never happen but around the 5 minute mark it will start to form into a paste.

  8. Be sure to scrape down the sides of the food processor when needed.

  9. OPTIONAL- if you want you can add in 1-2 tablespoons of a neutral tasting oil, this will make your pistachio butter even creamier and smoother, I do like mine a bit more chunky so I don’t process it to the completely smooth point.

    Notes and Adjustments!

This is a perfect recipe to put your own personality into! You can add in sweetener if you want, I suggest using real maple syrup or agave to taste. To do that add in the sweetener when you add in the oil.

Have fun with this recipe, try adding in cocoa powder or cinnamon!
