One-Pot Vegan Pasta with Sun-dried Tomatoes & Artichoke Hearts

Craving a high-protein vegan pasta that bursts with flavor? This recipe featuring lentil pasta, sun-dried tomatoes, and artichoke hearts is a total winner. Lentil pasta packs a punch with protein and fiber, making it a hearty and healthy base. The sun-dried tomatoes add a tangy, savory kick, while the artichoke hearts bring a tender, slightly nutty richness that ties the whole dish together.

The best part is this can be made in under 20 minutes and is a one-pot recipe with no dishes to do after! This is also a Trader Joe’s recipe – all of the ingredients can be purchased at Trader Joe’s. No Trader Joe’s, no problem - every ingredient is common and easy to find.

This easy vegan meal is super simple to whip up and is also loaded with nutrients, making it perfect for a quick weeknight dinner or a satisfying lunch.

Ingredients

  • 6 ounces lentil pasta - you can also substitute another high-protein pasta like chickpea pasta

  • 1/2 of an 8.5-ounce jar of sun-dried tomatoes packed in oil and spices

  • 1 14-ounce can artichoke hearts

  • 1 tablespoon plant-based butter

  • Vegan parmesan cheese for garnish – I used Trader Joe’s Vegan Parmesan for this recipe but my Homemade Vegan Parmesan works great in this recipe too.

Instructions

  • Add about 6 ounces or 1/2 a bag of pasta to boiling salted water.

  • Add in a dash of cooking oil - this will prevent the pasta from boiling over.

  • Cook according to package directions - be careful to not overcook this pasta or it will become mushy! Generally it takes 5-6 minutes.

  • While the pasta is cooking, drain the sun-dried tomatoes and artichoke hearts and cut into small pieces.

  • Drain the cooked pasta.

  • Add 1 tablespoon of plant-based butter to the pot you cooked the pasta in.

  • Add in the sun-dried tomatoes and artichoke hearts and then add a dash of salt. You can also add garlic powder if you want or any other spices!

  • Add the pasta to your pot and combine very well - salt or spice to taste.

  • Garnish with vegan parmesan cheese – Enjoy!
