Easy Roasted Sweet Potatoes That Everyone Loves

These oven-roasted sweet potatoes are simple, healthy, and absolutely delicious. Sliced thin for even cooking, they’re tossed with plant-based butter, a drizzle of maple syrup, and a sprinkle of cinnamon before baking until tender and golden. The result is a naturally sweet, cozy side dish that’s always a crowd-pleaser.

This maple cinnamon sweet potato recipe is perfect for weeknight dinners when you want something quick and nourishing, but it also shines on a holiday table alongside your favorite plant-based mains. With just a few ingredients, you’ll have a flavorful, healthy side that everyone will enjoy. The optional maple walnut topping takes these to the next level and ensures people will ask for them again and again.

Ingredients

  • 2-4 sweet potatoes

  • 2 tablespoons maple syrup

  • 2 tablespoons plant-based butter, melted

  • 1/2 to 1 tablespoon cinnamon

  • Chopped walnuts for garnish

Instructions

  • Wash the sweet potatoes very well - I leave the skins on.

  • Cut off the ends of the sweet potatoes and use a knife to carefully remove any obvious imperfections.

  • Slice the sweet potatoes into even slices about 1/8-inch thick - I use a mandoline slicer (check out my favorite safe-to-use mandoline slicer below!), but you can also cut carefully with a sharp knife.

  • Mix together the melted plant-based butter, 1 tablespoon maple syrup, and 1/2 tablespoon cinnamon in a small bowl. (These are the amounts for 2 potatoes; for 4 you can double the amounts of plant-based butter, maple syrup, and cinnamon.)

  • Toss the sliced sweet potatoes with the melted plant-based butter mixture above. Be sure each potato slice is coated - I like to toss them with my hands.

  • Lay the sweet potato slices out on a baking sheet lined with aluminum foil in a single layer - some overlap is OK.

  • Bake for 30 to 45 minutes in a 350-degree (Farenheit) oven. You can flip them once halfway through. You will know they are done when they are cooked all the way through and the edges are crispy.

  • You can serve them as is, but I like to mix about 1 tablespoon of maple syrup and 1/8 to 1/4 cup of chopped walnuts together and then drizzle this mixture over the sweet potatoes. I also like to serve them on a bed of wilted greens because it gives a nice flavor balance.
